My wife picked up the corned beef for tomorrow’s game night on her way home today.
It’s the grey corned beef that I prefer. The red has saltpeter in it and I don’t tend to get along well with that.
And, growing up, my family always cooked the grey.


It’s 10 pounds before cooking, so will probably be 1/4 pound after I boil it for a few hours.
But, it was still big enough I had to cut it in half before putting it in the pot.


I only cook it a couple of times a year, and that’s pretty much all that goes in the big pot.


While it cooks I’m catching up with the Florida laundry and starting to look at the video of the trip. All three things take a long time, but I’m pretty sure the beef will finish before the video if not the laundry...

I don't go for the saltpeter, either- that's why I get a plain brisket and corn it myself.

I've got 2 huge hunks o' beef curing in the fridge now- I'll make one into boiled dinner, and freeze the other.
