They are bucklers. As in swash-bucklers. They were a type of small shield very popular in the 1300's. Chaucer talks about them in the Canterbury Tales. The sequence they are doing in the photo comes from a book on sword fighting written in the first half of the 1300's probably at a cathedral school. It shows priests, monks and nuns sword fighting and is the oldest European book we have giving instructions on sword fighting. It is my wife's personal favorite.
