Vegetarian eggs guarantee that the chucks NEVER encounter the outside world and thus can eat a bug, as they love to do and as is good for egg nutrition; they are fed vegetarian feed instead.

Hens eating bugs make better eggs.

Note that damn near all male chicks hatched are probably killed at hatching, vegetarian or not. Breeds raised for egg production don't even allow the boychicks to be raised for meat.
